About the role

As Executive Chef at Hilton Fiji, you own the vision, strategy, and success of all hotel culinary operations, ensuring high standards of food quality, presentation, cost controls, and profitability. You will partner with the Food and Beverage Director to develop new menus based on current food trends and regional tastes, and engage directly with guests to assess satisfaction and elevate the dining experience. The role is hands-on, leading and directing the preparation of menu items to the highest standards through recipe card precision, team member training, and menu engineering. You will also oversee kitchen systems and workflows, drive team engagement and retention through performance management and professional development, and uphold compliance with health, safety, sanitation, and alcohol awareness regulations.

Key responsibilities

  • Oversee the preparation and production of hotel meals, ensuring high standards of food quality, presentation, cost controls, and overall profitability
  • Partner with the Food and Beverage Director to develop new menus and individual menu items based on current food trends and regional tastes
  • Engage with guests and clients to assess satisfaction, address concerns, and implement improvements to elevate the dining experience
  • Oversee budget management, forecasting, and reporting to ensure financial targets are met and culinary operations are aligned with the hotel's goals
  • Lead and direct preparation of menu items to the highest standards through recipe card precision, team member training, and menu engineering
  • Oversee and streamline kitchen systems, processes, and workflows to ensure smooth and efficient operations
  • Drive team engagement and retention through performance management, professional development, and recognition programs
  • Uphold compliance with health, safety, sanitation, and alcohol awareness regulations

About the successful candidate

  • Diploma in Culinary Arts or equivalent
  • 10-15 years as Head of Kitchen in a 4/5-star category hotel or individual restaurants with high standards
  • Work experience in a similar capacity with international chain hotels
  • Relevant Food Safety/HACCP certifications
  • A passion for hospitality and delivering memorable guest experiences
  • Strong leadership skills with the ability to inspire and manage a team
  • A sense of ownership and accountability in culinary operations
