About the role
The Executive Chef will lead and develop a culinary brigade of approximately 45 professionals across multiple kitchens, outlets and event operations at Grand Pacific Hotel. This includes overseeing restaurants, bars, a bakery cafe, in-room dining and conference and events facilities. The role covers one of Fiji's most established hotel conference, events and social catering operations, curating experiences from chef's tables and degustation menus to large-scale weddings, government functions, diplomatic events and VIP engagements. The chef will also drive commercial outcomes such as menu engineering, food cost, labour productivity, forecasting and procurement, while building a succession pipeline to develop future culinary leaders as the hotel transitions into IHG's Luxury & Lifestyle brand.
Key responsibilities
- Lead approximately 45 culinary professionals
- Lead all culinary operations across restaurants, bars, bakery cafe, in-room dining and conference & events facilities
- Build a strong succession pipeline and develop future culinary leaders
- Curate culinary experiences from chef's tables, degustation menus and wine pairing dinners to large-scale conferences, weddings and gala events
- Lead culinary delivery for conferences, government functions, diplomatic events and VIP engagements
- Drive menu engineering, food cost, labour productivity, forecasting and procurement
About the successful candidate
- Formal culinary qualification or related discipline, with HACCP certification preferred
- Minimum 10 years progressive culinary leadership experience
- 3-5 years as Executive Chef or Executive Sous Chef within an international five-star hotel, luxury resort or premium convention hotel
- Proven experience leading culinary brigades of 40+ colleagues
- Demonstrated success managing significant conference, event, wedding and banquet operations
- Experience curating luxury dining experiences, wine pairing dinners and exclusive guest experiences
- Exceptional leadership, coaching and talent development capabilities, with success in structured succession planning
- Strong commercial acumen in menu engineering, forecasting, procurement and profitability
