About the role
This Commis 2 - Pastry role is based in the kitchen at Fiji Marriott Resort Momi Bay in the Western Division. The position is responsible for preparing ingredients, cooking and plating food to recipe, quality, and presentation standards, and maintaining a clean, safe, and well-organised work station. The role involves operating kitchen equipment such as ovens, stoves, grills, microwaves, and fryers, and checking food and appliance temperatures for correctness. The commis is expected to follow safety and security policies, maintain a professional appearance, and work collaboratively with the kitchen team. Physical demands include standing, walking, bending, and lifting objects up to 25 pounds for an extended period.
Key responsibilities
- Prepare ingredients for cooking, including portioning, chopping, and storing food.
- Wash and peel fresh fruits and vegetables.
- Weigh, measure, and mix ingredients.
- Prepare and cook food according to recipes, quality standards, presentation standards, and food preparation checklist.
- Prepare cold foods and operate ovens, stoves, grills, microwaves, and fryers.
- Test foods for correct cooking and monitor food quality during preparation.
- Set up and break down work stations, and serve food in proper portions onto proper receptacles.
- Wash and disinfect kitchen areas, tables, tools, knives, and equipment, and check temperature correctness of appliances and food.
About the successful candidate
- Education: High school diploma or G.E.D. equivalent.
- Related work experience: at least 1 year of related work experience.
- No supervisory experience required.
- No license or certification required.
- Position open to Fiji citizens only.
- Able to stand, sit, or walk for an extended period or entire work shift, and perform bending, twisting, pulling, and stooping.
- Able to move, lift, carry, push, pull, and place objects weighing up to 25 pounds without assistance.
