About the role

The Specialty Chef is responsible for preparing, cooking, presenting, and quality-controlling specialty cuisine within the resort's food and beverage operations. The role covers ingredient preparation, portioning, cooking, plating, and maintaining kitchen cleanliness and organization, while monitoring food quality and consistency and upholding food hygiene standards. The Specialty Chef works closely with the Culinary team and other operational departments, reporting quality issues to the Sous Chef, Chef de Cuisine, or Executive Chef. The role also supports banquet, catering, and special event culinary requirements, and requires flexibility to work varying schedules including weekends, evenings, and public holidays.

Key responsibilities

  • Prepare ingredients for cooking, including portioning, chopping, weighing, measuring, and storing food items according to operational requirements.
  • Pull and prepare products from freezer storage and ensure proper thawing procedures are followed.
  • Prepare, cook, and present specialty dishes according to established recipes, quality standards, presentation standards, and food preparation checklists.
  • Monitor food quality throughout preparation and cooking, including appearance, flavor, texture, and temperature.
  • Maintain cleanliness and organization of assigned kitchen stations, and clean and sanitize equipment, utensils, and work surfaces.
  • Ensure proper storage, labeling, rotation, and handling of food products, and monitor temperatures for food safety compliance.
  • Follow company policies, food safety standards, HACCP, and brand guidelines, and report unsafe conditions to management.
  • Communicate with chefs, kitchen associates, and service teams to support smooth kitchen operations, including during banquets and special events.

About the successful candidate

  • Trade Certificate, Culinary Certificate, or equivalent qualification in Culinary Arts, Professional Cookery, or a related field.
  • Minimum 2 years of culinary or food preparation experience within a hotel, resort, restaurant, or similar food service environment.
  • Experience preparing specialty cuisine and working in a fast-paced kitchen environment preferred.
  • Sound knowledge of food preparation techniques, food presentation, kitchen operations, and culinary standards.
  • Good understanding of food safety, sanitation, hygiene, and HACCP principles.
  • Ability to follow recipes, preparation instructions, and quality standards accurately.
  • Strong attention to detail with ability to work efficiently under pressure and manage multiple tasks.
  • Flexible availability to work shifts, weekends, public holidays, and peak operational periods.
