About the role
The Beverage Manager leads and oversees daily beverage operations across the property's Bars, Lounges, Restaurants, In-Room Dining, and other beverage service areas. The role is accountable for delivering high-quality beverage programs in line with Marriott brand standards while managing cost controls, inventory, and team development. It carries responsibility for maximising beverage revenue and profitability while ensuring compliance with liquor laws, food safety standards, and company policy. The Beverage Manager works closely with Food & Beverage leadership and operational teams across the property to support guest satisfaction, operational excellence, and employee engagement.
Key responsibilities
- Lead and oversee daily beverage operations across Bars, Lounges, Restaurants, and In-Room Dining outlets, ensuring compliance with Food & Beverage policies and Marriott brand standards.
- Monitor beverage quality, presentation, and service delivery, and support development of beverage menus, promotions, and outlet initiatives.
- Support beverage revenue strategies, analyse sales performance, and recommend actions to improve profitability and revenue mix.
- Manage beverage inventories, control systems (bar pars, perpetual inventory, issue/return processes), and liquor control and portion procedures to meet financial targets.
- Review financial, payroll, and operating reports, and support budgeting, forecasting, and cost-saving initiatives.
- Deliver and drive exceptional guest service, respond to guest feedback and complaints, and implement service recovery measures.
- Lead, coach, and train beverage associates on service standards, liquor control, and compliance, and support recruitment, onboarding, and performance management.
- Ensure compliance with liquor licensing regulations, responsible service requirements, food safety and sanitation standards, and conduct audits and inspections of beverage operations.
About the successful candidate
- Degree or Diploma in Hospitality Management, Hotel Management, Food Service Management, Business Administration, or a related discipline.
- Minimum of 4 years of experience in Beverage Operations, Food & Beverage, Hospitality, or a related field.
- Proven experience managing beverage operations in hotels, resorts, restaurants, bars, or hospitality environments.
- Strong understanding of beverage service operations, liquor control procedures, inventory management, and cost controls.
- Knowledge of beverage sales analysis, forecasting, budgeting, and financial performance management.
- Strong understanding of liquor licensing regulations, responsible service practices, and food safety standards.
