About the role

This Demi Chef de Partie role sits within the resort's kitchen team, responsible for preparing food to recipe, quality, and presentation standards. Duties include regulating cooking equipment temperatures, thawing stock, preparing cold foods, and maintaining food logs. The role also involves monitoring food quality and quantity, informing the Chef of excess items for daily specials, and keeping Food & Beverage service staff updated on menu specials and stock outs. The position carries some team leadership involvement, assisting management with hiring, training, scheduling, and coaching kitchen staff. This is an island-based role requiring a rostered stay-on-island work schedule.

Key responsibilities

  • Prepare special meals or substitute items and cook according to recipes, quality, and presentation standards
  • Regulate temperature of ovens, broilers, grills, and roasters
  • Pull food from freezer storage to thaw in the refrigerator; prepare cold foods
  • Ensure proper portion, arrangement, and food garnish; maintain food logs
  • Monitor the quality and quantity of food prepared and communicate assistance needed during busy periods
  • Inform the Chef of excess food items for daily specials, and inform F&B service staff of menu specials and out-of-stock items
  • Assist management with hiring, training, scheduling, evaluating, and coaching kitchen employees
  • Follow company safety and security policies, reporting maintenance needs, accidents, or unsafe conditions

About the successful candidate

  • High school or tertiary qualification in Cookery or Culinary Arts
  • Minimum 1-2 years of experience in a commercial kitchen or similar food preparation environment
  • Good understanding of basic cooking techniques, food handling, and HACCP-aligned hygiene practices
  • Ability to follow recipes, maintain consistency in food quality, and work efficiently during busy service times
  • Strong communication skills, a positive attitude, and the ability to work effectively within a team
  • Must have legal working rights in Fiji
  • Able to work a rostered stay-on-island schedule as this is an island-based role
  • Physically able to stand, sit, or walk for extended periods and lift, carry, or move objects weighing up to 25 pounds
